CUBAN QUINOA

Ingredients

3 TB braggs
2 TB apple cider vinegar
2 TB maple syrup
1 pkg Bacon Tempeh
Olive Oil
1 C quinoa
1 1/2 C vegetable broth
1/2 medium pineapple
1 onion
4 cloves garlic
1 14 oz can black beans
1 pkg frozen broccoli

1.  cook quinoa in 1 1/2 cups of vegetable broth - bring to a boil - simmer for 15 minutes - let sit covered for 5 minutes

2.  cook crumbled tempeh in 2 TB olive oil until crispy, then add to quinoa

3.  defrost broccoli and chop small, then add to quinoa and tempeh

4.  add another 2 TB olive oil to the fry pan and saute 4 minced garlic clove and diced onion, then add the mixture of braggs/apple cider vinegar/maple syrup, black beans, and diced pineapple - saute for 5 minutes, then add to quinoa mixture
