Confirmation of my love of lists!

Here I am sitting on the couch with potential for a very productive day. I have options floating around in my head; some I'd like to do, some I should do, and some I shouldn't do - like sitting on the couch on my phone and the computer with "Hart of Dixie" playing in the background, and the pup snuggled up to me. Though pleasurable, not productive!

It would seem I should make the list right away, but for some reason I have to meet with the panic of wasting a greater part of the day before I make the gosh darn LIST, and then the magic begins. I organize it in sections of have to's, should's, would like to's, and if I have time to's, all numbered.

All of a sudden my mind has been freed up of panic, guilt, and confusion. What appeared in my head to be a daunting, painful list of tasks are accomplished in a surprisingly, rapid fashion. It also provides the space to follow the inspiration to do things that weren't even on the list, like writing this blog post :)

CUBAN QUINOA

Ingredients

3 TB braggs
2 TB apple cider vinegar
2 TB maple syrup
1 pkg Bacon Tempeh
Olive Oil
1 C quinoa
1 1/2 C vegetable broth
1/2 medium pineapple
1 onion
4 cloves garlic
1 14 oz can black beans
1 pkg frozen broccoli

1.  cook quinoa in 1 1/2 cups of vegetable broth - bring to a boil - simmer for 15 minutes - let sit covered for 5 minutes

2.  cook crumbled tempeh in 2 TB olive oil until crispy, then add to quinoa

3.  defrost broccoli and chop small, then add to quinoa and tempeh

4.  add another 2 TB olive oil to the fry pan and saute 4 minced garlic clove and diced onion, then add the mixture of braggs/apple cider vinegar/maple syrup, black beans, and diced pineapple - saute for 5 minutes, then add to quinoa mixture

Vacation Is Over

I haven't taken a whole week of vacation since my children were small. I had a great time with the pup. We went to Connecticut and hiked with Jill and Annika. We hiked with Jess and Lilly. We hiked with Elizabeth and Daisy. This photo is from our visit to our favorite park before the thunderstorms started tonight. I go back to school tomorrow quite refreshed. I will miss the pup though. ♥
